Farina Senatore Cappelli semi-integrale

The same flour we use for our pasta: organic Senatore Cappelli wheat from Civita Castellana, stone-ground at Cercemaggiore in Molise. Semi-wholegrain, with an amber colour and the scent of real wheat. For fresh egg pasta: 100g per person, one whole egg. For bread: 70% hydration, long rise. The result is worth the patience.
