Paccheri

Paccheri is an unforgiving shape: cook it well or ruin it. In Senatore Cappelli it has an added advantage: the pasta is flavourful enough to hold its own even with simple dressings. The wide open shape means every bite is half a pacchero full of sauce. The format for important lunches.
